Monday
Spicy Mexican Burrito with Yoghourt Sauce: Combine equal quantities of panfried lean minced beef, red kidney beans & a tomato, taco or pasta sauce. Spread mixture over tortillas and top with shredded lettuce, avocado and Jalna Fat Free Natural or BioDynamic Organic Yoghourt and roll up.
Tip: Make a double quantity and freeze half. Substitute or add tacos.
Tuesday
Combine sweet chilli sauce & Jalna Natural Yoghourt and use as a sauce over chicken or fish, on rissoles or burgers or as a dipping sauce for spring rolls.
Tip: Add chopped ginger, shredded Kaffir lime leaves and/or coriander to the sauce.
Wednesday
Chargrilled Salmon on Pea & Yoghourt Mash
Serves 4
3 cups fresh or frozen green peas 1 large onion, chopped 1 ¾ cups Jalna Fat Free Natural or BioDynamic Organic Yoghourt 4 ocean trout or salmon fillets, about 165g each 1 tablespoon olive oil 2 tablespoons chopped fresh parsley and chives 1 tablespoon chopped fresh mint Cracked black pepper
- Microwave or gently simmer peas and onions until tender. Mash and stir through 1 cup Jalna Yoghourt. Keep warm while cooking fish.
- Brush fish lightly with oil and chargrill or pan fry over moderately high heat until just cooked through. Serve on pea mash with a dollop of Jalna Yoghourt combined with herbs and pepper.
Thursday
Fragrant Yoghourt Lamb Kebabs - Combine Jalna Greek Style Natural or BioDynamic Organic Yoghourt with tandoori paste, to taste. Thread diced lamb onto bamboo skewers. Marinate lamb for 30 minutes. BBG or grill until cooked. Serve with mango chutney and steamed Jasmine rice.
Tip: Substitute lamb with chicken, beef or firm fish (eg. blue eye, ling, salmon or trout). Add vegetables (eg. cherry tomatoes, zucchini, capsicum). Dice meat and vegetables the same size for even cooking.
Friday
Chargrilled Beef with Asparagus & Horseradish Yoghourt - Combine Jalna Greek Style Natural Yoghourt with horseradish and lemon or lime juice and salt and pepper, to taste. Chargrill beef steak and serve topped with asparagus and horseradish yoghourt with baby potatoes on the side.
Tip: Allow cooked beef and potatoes to cool. Thinly slice beef and toss with halved potatoes, chopped asparagus and horseradish yoghourt for a simple but substantial salad.
Saturday
Creamy Pesto Pasta - Toss cooked spaghetti with basil pesto, chopped semi dried or halved cherry tomatoes and Jalna Greek Style Natural or BioDynamic Organic Yoghourt, to taste.
Tips: Add blanched vegetables and/or shredded chicken, cooked prawns or sliced beef. Serve hot or cold as a salad.
Sunday
Potato & Tuna Salad with Yoghourt Mustard Dressing
Serves 4
Dressing: ½ cup Jalna Fat Free Natural or BioDynamic Organic Yoghourt ¼ cup low fat sour cream or mayonnaise 2 teaspoons Dijon or wholegrain mustard pinch sugar 1 tablespoon olive oil
Salad: 1 kg small new potatoes (chats) 300g fresh or canned tuna (or salmon) 4 medium dill cucumbers, finely diced 2 tablespoons each copped chives and dill salt & pepper
- Wash potatoes and simmer, unpeeled, until just cooked. Drain and leave to cool.
- While the potatoes are cooking, panfry or chargrill fresh tuna (no need to cook if using canned).
- Flake fish and carefully combine with dill cucumbers, chives, dill and potatoes.
Whisk dressing ingredients and gently mix through potato salad. Season to taste.
