Chia & Strawberry Acai Layered Pot

Ingredients

Chia layer
¼ cup Jalna Greek yoghurt
½ cup coconut milk
½ cup almond milk
½ vanilla bean, seeds scraped
½ Tbsp of honey optional
¼ cup black & white chia seeds
Strawberry acai layer
3 frozen bananas
1 cup strawberries, tops removed
½ Tbsp acai powder
Yoghurt Layer
¼ cup Jalna Greek yoghurt
Garnish
2 Tbsp chopped pistachios

Method

Place, yoghurt, coconut milk, almond milk, vanilla bean seeds & honey, in a bowl. Whisk. In a gentle stream pour in chia seeds whisking to combine. Let sit for a few minutes & whisk again. Put bowl into fridge to allow the chia to set. Whisk again in 20 mins so chia doesn’t clump at bottom.
After 1-2 hours the chia will be set & is ready to use.
In a blender blitz the frozen bananas, strawberries & acai powder till smooth & creamy.
In a jar or glass layer the chia, strawberry acai & yoghurt. Repeat the layers until the jar is full. Garnish with more yoghurt & chopped pistachios.
Leave in fridge until ready to serve.
