Prawn Salad with Yoghurt & Honey Mustard Dressing

Ingredients

Dressing
1/2 cup of Jalna Greek Style Yoghurt
1/2 cup olive oil
1/4 cup Dijon mustard
2 tbsp Capilano honey
2 tbsp apple cider vinegar
2 tbsp lemon juice
pinch of salt & pepper
Salad
500g cooked prawns, peeled and de-veined
2 baby cos lettuce, trimmed, cut into wedges
1 large avocado, sliced
3-4 radishes thinly sliced
1 tbsp finely chopped chives

Method

Put all dressing ingredients in a jar and shake well, set a side.
Arrange the lettuce and prawns on a serving plate. Top with avocado slices and radishes
Drizzle over the dressing.
Top with chives to serve
