Chicken Tacos with chipotle yoghurt

Ingredients
- Chicken Marinade
- 1 ½ Tbsp olive oil
Method
- Preheat a grill plate or grill pan to medium-high heat. Lightly oil the grill.
- In a bowl, whisk together the olive oil, lime juice, cumin, smoked paprika, salt and pepper.
- Add the chicken thighs and marinate for 15-20 minutes.
- Grill the chicken thighs until the chicken is just cooked through, about 5-6 minutes per side.
- To make the Chipotle Yoghurt dressing. In a medium bowl, combine the yoghurt, chipotle pepper, adobo sauce, tajin seasoning, lime juice & salt. Whisk to combine completely.
- Lightly grill the tortillas. Finely slice the cabbage. And roughly chop the chicken thighs.
- To assemble your tacos, place shredded cabbage on top of tortilla, add the chicken. Serve with generous dollops of the chipotle yoghurt dressing & fresh coriander leaves. Sprinkle with extra Tajin seasoning.
