Chicken Tacos with chipotle yoghurt

Ingredients

Chicken Marinade
1 ½ Tbsp olive oil
8 tsp (40ml) fresh lime juice
½ tsp ground cumin
½ tsp smoked paprika
½ tsp chipotle powder
¼ tsp salt flakes
¼ tsp ground black pepper
1kg chicken thighs
Chipotle Dressing
200g Jalna Greek Yoghurt
½ chipotle pepper, seeded & finely chopped
1 tsp adobo sauce (from chipotle pepper can)
½ tsp Tajin mexican seasoning
½ tsp fresh lime juice
½ tsp salt flakes
12x corn or flour tortillas lightly chargrilled
Red cabbage finely sliced
Garnish
½ tsp Tajin Mexican seasoning
Pickled red onions
Fresh coriander leaves
Lime wedges

Method

Preheat a grill plate or grill pan to medium-high heat. Lightly oil the grill.
In a bowl, whisk together the olive oil, lime juice, cumin, smoked paprika, salt and pepper.
Add the chicken thighs and marinate for 15-20 minutes.
Grill the chicken thighs until the chicken is just cooked through, about 5-6 minutes per side.
To make the Chipotle Yoghurt dressing. In a medium bowl, combine the yoghurt, chipotle pepper, adobo sauce, tajin seasoning, lime juice & salt. Whisk to combine completely.
Lightly grill the tortillas. Finely slice the cabbage. And roughly chop the chicken thighs.
To assemble your tacos, place shredded cabbage on top of tortilla, add the chicken. Serve with generous dollops of the chipotle yoghurt dressing & fresh coriander leaves. Sprinkle with extra Tajin seasoning.
